Mizeria (Cucumber Salad)

Mizeria (Cucumber Salad) is an easy traditional Polish salad which works wonderfully with fish.  The dill offers an aromatic flavor. Serve with salmon fillets from the BBQ and some boiled potatoes for a light summer dish.

We always have a massive influx of cucumbers from the garden in July and August and to be honest, most of the time me and the kids just love to slice them up and eat them as a snack.  However, if there really is too many this salad is a great way to use them up.  These are some of the other ways I like to use them up:

  • Cucumber Riata
  • Pickled cucumbers
  • Sesame cucumber salad
  • Cucumber sandwiches (great for the kids :-))
  • Cucumber Salsa

Mizeria (Cucumber Salad)
Prep Time

Ingredients
  • 1 large cucumber
  • 1 large pinch of salt
  • 2 tbsp. 30ml natural yoghurt
  • 1 tsp. lemon juice
  • 1 pinch sugar
  • 1 small handful dill
  • 1 pinch pepper
Instructions
  1. Finely slice the cucumber into rings and lay out flat on a plate and sprinkle over salt to draw out some of the moisture
  2.  
  3. Squeeze the excess moisture from the cucumbers and drain
  4.  
  5. Mix together the yoghurt, lemon juice and sugar them combine with the cucumber
  6.  
  7. Finely chop the dill
  8.  
  9. Mix dill and pepper into the cucumber mixture
  10.  
  11. Serve chilled
