I know what your thinking, this Mixed Berries and Coconut Cream dessert cannot be good for me?  WRONG!

Super nutritious berries and the delightful creaminess of whipped cream and coconut make this the simplest most delicious dessert you are ever likely to come across.

My suggestion is 1 portion of fruit per day.  The best of which are:

  • Grapefruit
  • All Berries
  • Orange

Sprinkle some cinnamon on top to keep the blood sugar spike to a minimum.

Ingredients

  • 1 cup mixed frozen berries fresh are fine too
  • 400 ml whipping cream before whipping
  • 50 g creamed coconut

Instructions

  • Place the creamed coconut sachet in boiling water to soften
  • Whisk the whipping cream until thickened
  • Once the cream is forming peaks, add the coconut and continue mixing until combined
  • Place 1 tsp. berries in the bottom of a shot glass 
  • Add a tsp. of the coconut and cream mixture on top of the berries and refrigerate until ready to eat
