Courgette Pancakes

These courgette pancakes are not only a great way to use up that old courgette that’s been hiding in the fridge but is a great way to get the children to eat a vegetable which they would probably turn their nose up otherwise.  My girls absolutely love them.

You may also want to play around with adding some different spices, I enjoy cayenne and paprika to spice them up a little.

Why not try pairing these tasty courgette pancakes with this wonderful Pineapple Chili Jam from PepperScale.  Truly delicious!

  • 1 small courgette
  • 2 eggs
  • ½ cup spelt flour
  • 1 pinch salt
  • 1 large pinch pepper
  • ½ tsp paprika
  • ½ tsp baking powder
  • Butter from frying
  1. Grate the courgette into a bowl and stir in all the other ingredients
  2. Melt some butter in a frying pan over a medium heat
  3. Spoon the mixture into the hot pan to create your pancakes
  4. Cook on each side until golden brown
  5. Perfect served with Ketchup, Chilli Jam or any fruity chutney.
