Braised Beef Short Rib Recipe Oven

Braised Beef Short Rib Recipe Oven – With Roasted Garlic Mash is the Perfect dinner to cook for that special someone in your life…unless they are vegetarian of course.

It may seem like it takes a long time to cook, but, to be honest, once you have done the initial preparation you can leave it cooking with no more work until you are ready to make the delicious roasted garlic mash.


Braised Beef Short Rib Recipe Oven – With Roasted Garlic Mash

  • Prep Time: 20 minutes
  • Cook Time: 8 hours
  • Total Time: 8 hours 20 minutes
  • Yield: 2


2 portions of beef short rib

1 tbsp butter

1/2 tsp salt

1 tbsp olive oil

3 garlic cloves

1 white onion

1 cup red wine

2 cups beef stock

3-5 juniper berries

1 bouquet garni

1/2 tsp ground black pepper

Roasted Garlic Mash

2 garlic cloves

Drizzle of olive oil

4 potatoes peeled

4 tbsp butter

1/4 tsp black pepper

a splash of milk


  • Leave the beef out of the fridge for an hour before cooking


  • Put the butter in a frying pan over a high heat and sear the beef short rib on each edge for 1 minute


  • Remove the beef from the pan into a large casserole dish


  • Add the olive oil to the frying pan


  • Finely chop the 2 garlic cloves and the onion and reduce the pan heat to medium


  • Fry until slightly browning


  • Add the red wine and beef stock and stir until well combined


  • Add the juniper berries, bouquet garni, and black pepper to the beef and top up with a little water if required to cover the ribs


  • Set the oven to 110C/230F and cover the ribs with a lid or tin foil


  • Cook low and slow for 7 hours then turn the heat up to 180 for a final hour before ready to eat


  • Half an hour before the end of the cooking time remove from the oven and pour the juices into a jug


  • Allow the juices to sit still so the fat settles on the surface so you can scoop it out


  • Peel and cut the potatoes into chunks and cook in salted water for 20 minutes until soft then drain


  • In the meantime, peel the garlic cloves, place on a baking tray and drizzle with some oil


  • Place in the oven for 12 minutes to roast


  • Put the roasted garlic and the butter and pepper into the potatoes and mash


  • Add a splash of milk until the desired consistency is reached


  • When its time to serve, place the mash on serving plates and lay the short rib on top


  • Heat the juices up in the microwave for 1 minute and pour over the beef


  • Serve with your favorite steamed vegetables
