Before Moving to Portugal I could never imagined how many natural ingredients I would come across.  You can only imagine my delight when our neighbour brought us a bucket of fresh oranges yesterday.

I marched the kids into the kitchen and started preparing the most simple yet best orange marmalade I have ever tasted.  Its zingy and sweet and it just perfect on the morning toast.  I also couldn’t resist the urge to make a cake to compliment it – the finest Lemon Drizzle with Marmalade centre… simply irresistible and a very special treat.

When we moved to Portugal we were supposed to be cutting out sugar, but, who can resist a treat like that?  Of course, I took a few jars over to the kind neighbour to say thank you for the gift.  I hope he likes it as much as we do.

A delicious Orange preserve the whole family will be begging you to make again and again

  • 40 Oranges Past their best works well
  • 2 Lemons
  • 4 cups Sugar
  1. Wash the fruit well

  2. Cut the oranges into quarters and remove any pips - keep the skin on half of the orange and only keep the juice from the other half

  3. Place all of the oranges and the juice into a blender and blend until the peel is the desired size 

  4. Pour into a heavy bottomed pan and add the sugar and boil for 45 minutes

  5. Test the orange marmalade by placing a spoonful onto a cold saucer and place in the fridge for 5 minutes then checking if it has a jam like consistancy

  6. If it is not thick enough cook for a further 5 minutes, then repeat until ready

  7. Leave the marmalade to cool for 10 minutes then spoon into sterilised jars and seal until ready to use

Recipe Notes

When Testing the Orange Marmalade be careful not to over cook as it can become bitter, try adding a little more sugar if it seems too runny.

Always sterilise your jars before putting preserves in them.  The easiest way to do this is to pour boiling water over them and allow them to sit in it while you make the recipe.
