Nuoc Cham is a fiery sauce used in Vietnam like we would use salt and pepper in the western world.
Choose your chillies according to taste. I like to use Birdseye or piri piri chillies but I add 6 or 7 to gain that extra spice.
The Vietnamese serve up this bad boy with most meals, I prefer to stick to serving it up with noodles or my delicious clay pot chicken recipe… well what’s better than chilies with meat?
As with most things these days there can be conflicting advice on how much chilies and garlic we should be eating. Truth be told garlic is great for medicinal purposes but not so good if you take part in any mediation practice this is because both garlic and chilies activate the nervous system. Not good for that spiritual connection.
I for one cannot resist. I eat garlic and chili only when I don’t plan to meditate straight after. The health benefits are just to great to be ignored.
This Nuoc Cham dipping sauce will have a medium sugar effect on your blood sugars. This means you should use a little with a good balance of vegetables and nutrient dense foods. There are many other health benefits included in the sauce so it is a good option as a condiment. Especially when compared to store bought sauces.

- 2 fresh red chilies
- 2 garlic cloves
- 1 tablespoon honey
- 3 tablespoons thai fish sauce
- 1 lime (juice only)
- Remove the seeds from the chilies and roughly chop
- Place into a mortar and pound them into a paste with a pestle
- Add peeled garlic cloves and crush into the chili paste
- Squeeze the juice from the lime into the mortar and add the fish sauce
- Stir to combine and transfer into a small bowl
- Serve on the table at every meal
