- 1 cup mixed frozen berries fresh are fine too
- 400 ml whipping cream before whipping
- 50 g creamed coconut
- Place the creamed coconut sachet in boiling water to soften
- Whisk the whipping cream until thickened
- Once the cream is forming peaks, add the coconut and continue mixing until combined
- Place 1 tsp. berries in the bottom of a shot glass
- Add a tsp. of the coconut and cream mixture on top of the berries and refrigerate until ready to eat
