Preparing Your Chicken
There are a number of ways you can do this, and it all comes down to how much time you want to spend or have to spend on prepping the chicken. Here are some ways you can do that for your buffalo chicken salad.
Bake chicken breast: Simply seasoning raw chicken breasts with salt and pepper and then baking them in the oven is super easy if you have time to wait for the chicken to cook and then cool. Depending on how many chicken breasts you are using and their size, they can take anywhere from 20-30 minutes at 350 degrees Fahrenheit. You can even use bone-in breasts instead of boneless skinless chicken. Just keep in mind that it will take longer, but will give you much more flavor.

- large bowl
- 1 lb chicken breasts or 3 cups, cooked and shredded or diced
- 1/4 cup buffalo hot sauce homemade or store bought
- 1 cup shredded lettuce
- 1/2 cup cherry tomatoes
- 1/2 cup celery diced
- 1/4 cup sliced cucumber
- 2 tbsp green onion diced
- 1 carrot grated
- 1/4 tsp ground black pepper
- 1 tablespoon crumbled blue cheese
- 1/2 cup greek yogurt
- Slice the chicken breast and toss in the buffalo sauce
- Add the lettuce, sliced celery, carrot, cucumber green onion, and tomato to your salad bowl
- Add the chicken to the salad
- Combine yogurt and blue cheese then drop over the salad
- Season with black pepper and enjoy
