Today we can find such a good variety of different tomatoes in the supermarket and they are also so easy to grow at home. Even in Scotland, we can grow many different types though of course more can be found in the Mediterranean climates of Spain and Italy. Perfect for this tomato recipe.

  • Pre-heat oven to 230C / 440F 
  • Lay tomatoes on a baking tray
  • Pour over the balsamic vinegar and olive oil
  • Grind sea salt on top and add the basil leaves
  • Cook in the oven for 12 minutes until 
  • Serve up with some scrambled egg for the ultimate Italian breakfast
