Balsamic Roasted Tomatoes are so nutritious and the red and yellow delights are one of a few vegetables (or strictly speaking fruits) that become more nutritious through the cooking process. Spinach is another by the way!!

Enjoy these bad boys on toast or with some scrambled egg, what a stunning and delicious breakfast. They also make a delightful side to steak or other beef dishes.

Today we can find such a good variety of different tomatoes in the supermarket and they are also so easy to grow at home. Even in Scotland, we can grow many different types though of course more can be found in the Mediterranean climates of Spain and Italy. Perfect for this tomato recipe.

  • 4 cups mixed tomatoes (or 1 cup per person)
  • 2 tbsp good quality balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 1 tsp good quality sea salt
  • 1 small handful basil leaves


  • Pre-heat oven to 230C / 440F 
  • Lay tomatoes on a baking tray
  • Pour over the balsamic vinegar and olive oil
  • Grind sea salt on top and add the basil leaves
  • Cook in the oven for 12 minutes until 
  • Serve up with some scrambled egg for the ultimate Italian breakfast
