Baked Turkey Meatballs are a delicious meal packed with protein, a little spice, and many different textures. They make a filling and fun meal fit for the whole family. And, of course, you can add some extra chili if that’s your bag.
The beans are optional, you can simply omit them when making the sauce if you desire. However, they add a different texture and are warming and filling especially in the winter months.
I love to finish the dish of with a huge handful of chopped parsley for both color and yet another flavor and texture too.

How To Make Baked Turkey Meatballs
Equipment

- stove
Ingredients
Meatballs
- 800 g turkey mince (ground Turkey)
- 1/2 apple
- 1 slice bread (grated into breadcrumbs)
- 1 egg
- 1/2 teaspoon sea salt
- 1/2 teaspoon ground pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Rice
- 1 cup rice
- 2 cups water
Tomato Sauce
- 1 tin tomatoes
- 1 teaspoon crushed garlic
- 1 red chili
- 1 tablespoon balsamic vinegar
- 1/2` teaspoon salt
- 1/2 teaspoon ground pepper
- 2 large tomatoes (chopped)
- 1 can black eyed beans
Instructions
- Preheat oven to 190C / 375F
- Place all of the meatball ingredients into a large bowl and mix with your hands until thoroughly combined
- Take a baking tray and cover with parchment paper
- Roll golf ball size chunks of the meatball mixture and roll them in your hands till round then place them on the baking tray
- Repeat until all of the mixture is used up
- Bake in the pre heated oven for 18 minutes
Rice
- In the meantime combine rice and water with some salt and boil in a large pan for 12 minutes
Sauce
- Add tinned tomatoes, balsamic vinegar, ginger, garlic, salt and pepper to a frying pan over medium heat
- Simmer for 5 minutes then add chilli pepper with the end cut off to allow the release of flavour
- Add chopped fresh tomatoes and beans and simmer on low heat for a further 5 minutes
- Finally serve the meatballs on the boiled rice and smoother with tomato sauce and beans
