I love salsas and salads with different flavors, now we are going to be living in a warmer climate this is something I am looking forward to preparing regularly. Adding fruit to salsa is something I’m really enjoying at the moment especially pineapple and mango, they both go so well with meats.
My whole family are trying to eat more fish and less meat at the moment and I’m hoping the move abroad will help with this. There is so much fresh salmon available in Portugal so that’s a good start. Tomato and Coriander Pesto Salad
1 cup cherry tomatoes
1 small bunch coriander
1 tbsp olive oil
Juice of one lime
1/2 small onion
3 jalapeno rings (from a pickle jar)
1 pinch of salt
- Chop the cherry tomatoes in half and place in a bowl
- Place the Coriander, oil, salt and lime juice into a blender and pulse until smooth
- Finely chop the onion and jalapeno and mix all of the ingredients together until combined
- Serve immediately
