Portuguese Fruit Salad

If you are a regular visitor to I Cook The World, you will probably realise I have a love affair with this country.  So much so my family are relocating there soon.  We have purchased our home in the central region and we look forward to carrying out the work to make it our forever home, where I’m sure we will enjoy this fruit salad regularly.

In the mean time, I will be sure to bring you the best recipes I can find in Portugal.  This beautiful Portuguese Fruit Salad being the first.  It is perfect after any meal or as a snack at any time.  Adding mint to the syrup gives that little extra boost of flavour.  You will never look at fruit salad in the same way ever again.

Portuguese Fruit Salad

8 tbsp. (½ cup/120ml) Madeira Wine

2 tbsp. sugar

2 mint leaves

1 mango

1 cup (4.8oz) cherries

1 cup (4oz) strawberries

2 peaches

2 large oranges

2 apples

 

Instructions

  • Combine the Madeira wine, mint leaves, and sugar and set aside so the sugar dissolves.
  • Prepare all the fruit and cut into large chunks and place on a serving plate.
  • Stir the syrup to make sure there is no large grains.
  • Pour syrup over fruit making sure the mint leaves stay on top to garnish.
